The Best Recipe I Know

A coworker gave me this amazing recipe after bringing samples of it to work one day. It's hands down among the best things I've ever tasted, and it's so simple. It's also incredibly cheap to prepare, and it makes an entire stock pot. Lots of tasty leftovers, both in your fridge and your wallet.

White Bean Chicken Chili

Ingredients:

  • 1 lb. cooked, shredded chicken (I usually use 1 large can of canned chicken to save time)
  • 1 can chicken broth
  • 2 cans white beans (Great Northern brand are the best)
  • 1 large can or 2 small cans diced green chili’s
  • 1 clove garlic (I use fresh garlic)
  • ½ diced onion (I've used dehydrated onion)
  • ½ teaspoon cumin
  • ½ teaspoon pepper
  • ½ teaspoon oregano
  • ¼ teaspoon cayenne pepper
  • 1 t teaspoon salt
  • ½ cup heavy whipping cream
  • 1 cup sour cream

Instructions:

Sauté garlic, onion, green chili’s & spices in a sauce pan – sautéing is optional. Just throw it all in if in a hurry. Add chicken broth, un-drained white beans, and chicken (un-drained if canned). Cook until pretty much boiling. Add cream and sour cream. Stir thoroughly until heated through and serve.

You can also make this without adding the creams and freeze it. Once you thaw it and heat it, you can add the creams and serve it and it tastes just as good as if you just made it.

Memorial Saturday Fun

Two fun things happened today:

First we went for a nice walk around Oquirrh Lake. I can feel that summer is trying to push it's way in past the rain. I just hope it gets here sooner than later.

I also made my very first yeast risen loaf of bread. It was a fun project that took about 3 hours with the two risings and the baking time. It turned out delicious and my house smells so good right now. I have to be careful and make sure to share (and not eat it all myself). I'm excited to find some recipes to make more exotic bread. I think I will try to find a Rosemary and Parmesan bread recipe next!

Prepare for Monday Music

Sunday night always depresses me, as it means that the weekend has ended and it's back to the wrong side of a work week. I always try to listen to some music on Sunday night that pumps me up and puts me in a decent mood for the upcoming week.

Tonight's "Prepare for Monday" album is Dirty Vegas. This electronica / downtempo album has a lot of different songs on it, so one track still bleeds into another but strings along a lot of variety. It has an uplifting beat, perfect to counteract the end of the weekend.

Today’s Train Ride Album

I recently put The Garden by Zero 7 on my Zune and have decided to listen to it on my morning train ride. It was a really enjoyable album, with some good morning melodies. I don't like music that's too fast in the morning (still drinking my first cup of coffee when I'm riding in) but I need something that's upbeat to get me going for the day. This album kept my ears from going into shock and still left me ready for work. I particularly liked the 8-bit mixes in track 3 Seeing Things.

Daybreak Snow Removal

So today I received an email titled the "Daybreak Community Update". Well in actuality someone else received it and forwarded it on to me. It seems regardless of what I do to try and sign up for updates it never happens. Anyways, the following paragraph was in the email regarding snow removal:

Streets & Alleyways: South Jordan City is responsible for plowing ALL public streets and alleyways. This includes all condo alleyways and some townhome alleyways.

They also distributed this PDF regarding snow removal.

I live in the red townhomes facing Oquirrh Lake. This is surprising news to me, as it seems the only people who have ever cleared our rear alleyway have been employees of the landscaping company (their name escapes me, but they drive the red vehicles), and even then it is rarely happening. We've had to take to clearing our own alleyway far past 4" of snow accumulation and generally have to wait a long time to have our sidewalks cleared too. Generally when it's not cleared, it takes about 4-5 days of nice sunshine and 30°+ to melt it back down to cement, and even then the sheets of ice from tire tracks usually remains. I'm not often one to complain, but when I pay $2200 a year in HOA fees that are supposed to cover this sort of thing, I feel I have earned the right to complain.

In a recent posting, Daybreak Daily mentioned that the general lack of snow clearing occurring in Daybreak is a result of an ongoing lawsuit between Kennecott Land and South Jordan. South Jordan has made it official policy to no longer clear streets that are dead ends (or cul-de-sacs), which Daybreak has many of. Luckily our main street and alleyway are not dead ends, but I still wonder where the snow plows are. I believe that our alley is being cleaned by the landscaping company, for which I appreciate it, but I would rather my city tax dollars be used to clear city streets and save my landscaping dollars to get the remainder of the trees planted around Daybreak come springtime among other things.

I understand that the legal process exists for a reason, but while people debate who, when, and where snow removal is someone's responsibility, a large community who is already displeased with services rendered by the city and by the HOA is left wondering what they're paying for and what to do. The 58" of annual snowfall we receive makes for a long winter when we're paying and no one is clearing.

Postcrossing Card

I custom made this postcard showcasing some pictures in and around Salt Lake City that I've taken for use with Postcrossing. I ordered a pack from Moo and I hope they arrive soon! It's got pictures of the City/County Building at Washington Square, a pier on Oquirrh Lake in Daybreak, a poppy flower, a view of the Salt Lake Valley, and some stones.
